November Challenge

I'm challenging myself to post one new recipe each Monday in November.

Today's Recipe: Mary's Chicken & Noodle Bake


1 1/2 lbs. chicken breast, thighs, or whatever you like

1/3 cup flour

1 tsp. poultry seasoning

1/2 tsp. salt

1/4 tsp. pepper

1/4 tsp. paprika

2-3 onions, sliced thin

1 package of Lipton Noodle soup Mix

1 can evaporated milk

1 & 1/2 cup water

6 oz. cut/broken spaghetti


Place broken spaghetti pieces on the bottom of a baking dish. Mix flour & seasonings together and coat chicken pieces. Brown these in a pan with a little oil or butter. Place in a 9 x 13 baking dish (directly on top of the spaghetti) once they are browned nicely. Top with sliced onion and entire packet of noodle soup mix and water. Cover tightly with foil . Bake in 350 degree oven for 45 minutes or until chicken is thoroughly cooked. When done, remove chicken to plate, stir in evaporated milk and mix well. Add chicken back and serve with broccoli or green beans.

This is super easy & delicious. Kid friendly! Makes a great dish to send to someone also. IF there are leftovers, I add the chicken and sauce to a pot, add more carrots, onions, and celery along with extra noodles and a box of chicken broth for a great chicken noodle soup. Simmer for 30 minutes or until the veggies are cooked.
